Shalom and Deepest Sympathy to the children, grandchildren and great grandchildren of Erma Penner!
I, Valerie, have watched the livestream funeral service of Erma, and my mind was flooded with great memories of her and you as her family! I could not think of a single negative memory... only many fun times! Next to Erma's amazing baking, a highlight of my teen years at the Penner Dairy farm was scaling the heights of the big blue silo with Melanie, and sitting on the railing at the top to get the best view of Blumenort. It made the Grandpa next door very nervous, and he called for us to come down, and we did so, safely. I don't recall being scolded for that adventurous climb! My job later in adult life, would bring me back to this dairy farm every 6-8 weeks... each time recalling memories of the Penner family!
Back to Erma's skills in the kitchen, I recall many great meals with them... and some of Erma's recipes are still favorites of mine today...and I have shared with others. The most liked has been LEMON CRUMBLE (which I believe was in a Green cookbook from the Blumenort EMC Church)... I always have thought about Erma when I make it!
Here is the recipe for others to enjoy:
Lemon Crumble
Prepare a Lemon Pie Filling (Shirriff brand), according to
Directions on box. Set aside.
For crumb mixture, put together the following:
2 cups rolled oats
1 ¼ cup flour
1 cup white sugar (or non-sugar substitute such as Monk Fruit, Stevia blend)
1 cup butter, melted
1 cup coconut, medium or fine flaked, unsweetened
1 ½ tsp. baking powder
Mix well… should be moist crumbs.
Put half of crumbs into a greased 9 x 13” baking pan. Press down to form a base.
Spread lemon pie filling evenly over base.
Loosely crumble remaining crumbs on top of filling.
Bake for 25 – 30 minutes at 350°F until filling bubbles at edges and crumbs are light golden brown.
Remove from heat, allow to cool before cutting into squares. Or if serving Hot... serve with Vanilla ice cream.
*** This recipe may be prepared the day before, and baked the day of being served...if wanting to serve it hot.
It's excellent as a hot or cold dessert.

Erma was a great student of mine in Grades 7&8 in Montezuma School back in the late 50s. So much ‘water under the bridge’ since! Condolences to her family and friends. (Could I be the teacher she ‘kicked in the shins’?). Great memories of those days!

So thankful that we could join for the live stream service for Erma - a dear sister (in law). She was a special lady and you the family did an amazing job of portraying it exceptionally well through the tributes, obituary and slideshow. The scripture chosen was very suitable. We agree and treasure each visit we had with her even the last year how alert and interested she was in our life. Her life continues beautifully in the lives of her children, grandchildren, etc.

As we celebrate the birth of Jesus at this time of year, we can also rejoice that Erma knew him as her personal saviour and will spend eternity with Him and loved ones who have gone before.
